Abstract

Daging sapi merupakan produk peternakan yang diperlukan masyarakat sebagai sumber protein dan memiliki kandungan asam amino yang lengkap untuk mengatasi masalah stunting pada anak-anak. Terkait hal ini, kondisi daging yang berkualitas dan bebas dari mikroba patogen dapat menjamin kesehatan. Escherichia coli p termasuk yang mampu memproduksi Shiga toksin., yang dihasilkan oleh Escherichia coli O157:H7 dan telah ditemukan pada daging yang dipasarkan di beberapa negara. Cemaran Escherichia coli O157:H7 pada daging dapat mengakibatkan gangguan kesehatan akibat toksin berupa diare hingga kematian. Tujuan dilakukannya surveilans cemaran Escherichia coli pada daging segar adalah untuk mengetahui persentase cemaran yang tejadi pada daging yang dijual di pasar tradisional. Surveilans dan pengujian telah dilakukan terhadap sampel daging yang dijual oleh para pedagang di beberapa kabupaten/kota di wilayah layanan Balai Besar Veteriner Maros, Sulawesi Selatan. Sebanyak 189 sampel daging sapi dari 10 kabupaten/kota dalam tahun 2017 dengan hasil sebanyak 85,19% tercemar oleh Escherichia coli. Persentase cemaran bervariasi pada tiap kabupaten/kota, dimana yang terkecil di Kabupaten Mimika dengan persentase sebesar 50,00% serta terbesar di Kabupaten Maros, Soppeng, Palu dan Ternate yang mencapai 100%. Pembinaan higiene dan sanitasi saat pemotongan sapi perlu menjadi perhatian agar cemaran mikroba ini dapat ditekan.
